Sharing funny gifts and baking muffins… It must be Christmas!!

Shortly before Christmas we met at applicake HQ for… Christmas baking competition. Three teams of applicakers were fiercely competing in baking the most delicious muffins. Needless to add (and with a help of spiced mould wine) – we had so much fun!

Even Santa Claus dropped by with a bag full of Christmas gifts (ok, they weren’t really ‘presents’ – they were shitty & funny things bought / made by less than 2 euros)!

Here is the winning muffin recipe. Go ahead and try it – it’s really piece of cake ;)

Ingredients

2 large ripe bananas, mashed
1-2 tsp lemon juice
150 g butter
150 g sugar
3 eggs
50 g chopped walnuts
150 g plain flour
2 tsp baking powder
½ tsp soda
salt
12 hazelnuts
powdered sugar

Method

1. Preheat the oven to 200°C. Prepare muffin tins by brushing the bases with oil or lining with paper cases. Mix mashed bananas with lemon juice.

2. Mix egg, butter and sugar in a bowl, then add mashed bananas and chopped walnuts.

3. Sift the flour, baking powder, soda and salt into another bowl. Pour the egg mixture into the flour mix and fold in with a fork.

4. Put the mixture into the tins filling three quarters full and place half hazelnuts on the top of each. Bake for approximately 20 minutes until golden brown and then let cool for about 5 minutes before removing from muffin tins. Dust with powdered sugar.

After you’re done, it should look somewhat like:

    What do you mean by “the winning recipe”? Everyone knows that the chocolate one was the best:) Ok, all were great. I look forward to making it a daily habit at our office.
